چکیده

Biofortification is a strategy for combating iron deficiency that involves the selectivebreeding of food crops to increase total bioavailable iron. Evidence showing ferritin as agood source of bioavailable iron has created interest for enhancing ferritin content in seeds.However, the successful implementation of ferritin biofortification requires a method torapidly measure ferritin in staple food crops. The objective of this study was to develop anELISA to quantify ferritin in red beans, white beans, wheat, maize, and brown rice. Thefollowing steps were taken for ELISA development. A common amino acid sequence amongall seed ferritins was identified to produce an anti-ferritin antibody, ferritin was extractedfrom the seeds using a crude extraction procedure, and immunoblotting techniques were usedto verify the immunoreactivity of the antibodies with the ferritin sample. Using our developed ELISA with the polyclonal antibody and recombinant pea ferritin standard, the quantity of ferritin by crude extraction was found to be 10.2±1.0, 4.38±0.9, 1.2±0.3, 0.38±0.1, and 0.04±0.01 μg/g in red beans, white beans, wheat, maize, and brown rice, respectively. There was no significant correlation between ferritin and iron in red beans;

Quantification of ferritin from staple food crops.

Ferritin-iron has been shown to be as bioavailable as ferrous sulfate in humans. Thus, biofortification to breed crops with high ferritin content is a promising strategy to alleviate the global iron deficiency problem. Although ferritin is present in all food crops, its concentration varies between species and varieties. Therefore, a successful ferritin biofortification strategy requires a meth...

Iron-biofortified staple food crops for improving iron status: a review of the current evidence

Iron deficiency is the most common micronutrient deficiency globally and represents a major threat to public health. Biofortification, the process of enhancing micronutrient content and bioavailability in staple crops, represents an exciting sustainable food-based strategy to combat and prevent iron deficiency, particularly in resource-limited settings. In this review, we examine the evidence t...

Breeding for micronutrients in staple food crops from a human nutrition perspective.

Over three billion people are currently micronutrient (i.e. micronutrient elements and vitamins) malnourished, resulting in egregious societal costs including learning disabilities among children, increased morbidity and mortality rates, lower worker productivity, and high healthcare costs, all factors diminishing human potential, felicity, and national economic development. Nutritional deficie...

Rice and Bean Targets for Biofortification Combined with High Carotenoid Content Crops Regulate Transcriptional Mechanisms Increasing Iron Bioavailability

Iron deficiency affects thousands of people worldwide. Biofortification of staple food crops aims to support the reduction of this deficiency. This study evaluates the effect of combinations of common beans and rice, targets for biofortification, with high carotenoid content crops on the iron bioavailability, protein gene expression, and antioxidant effect. Iron bioavailability was measured by ...

Millets for Food and Nutrition Security in India: Determinants and Policy Implications

Background: Food security has been a target in India since its independence; the primary aim of food security is to ensure enough staple food for the entire population. Although substantial progress was made through the adoption of green revolution (GR) technologies and implementation of the food public distribution system (PDS), desirable food and nutrition security, as defined by the food and...
